Nutmegs Whole - Quick Reference
What is it?: Whole nutmegs are the dried seeds of Myristica fragrans, intended to be freshly grated as required.
Flavour: Warm, sweet, woody and aromatic with clove-like, peppery and resinous notes.
Common uses: Freshly grated over custards, rice pudding, eggnog, bechamel, mashed potato, spinach, pumpkin and baked goods.
Pairs well with: Cinnamon, mace, cloves, ginger, vanilla, dairy, potato, squash and leafy greens.
How to use: Grate only the amount needed directly into the dish. A fine grater or microplane gives the most even result.
Compare with: Whole nutmeg keeps its aroma longer than pre-ground nutmeg and gives a fresher, more layered flavour when grated.
Substitute: Ground nutmeg is convenient, but begin with less because it disperses immediately through the dish.
Storage: Store whole and dry in an airtight container away from light; grate only when required.
Good to know: One whole nutmeg lasts through many recipes, and its hard seed can be returned to storage after each use.
