How you dry leaves makes a huge difference to the form, dried in the sun will produce delicate curling leaves while freeze drying or vacuum drying will produce rigid solid leaves
Our Kaffir Lime Leaves are just that, rigid solid leaves - this ensures the flavour is stored in the leaves and not lost in the drying process
Lime Leaves can be added to any dish - Thai in particular for us, other cuisines just as good
The flavour is very pungent from Lime Leaves, when powdered 1 teaspoon is about the same as 5 leaves, so using a little at a time is advised

Lime Leaf Powder - Quick Reference
What is it?: Finely ground dried makrut lime leaves, offering their citrus aroma in an easy-to-disperse form.
Flavour: Intensely fragrant, floral and lime-like with a green, slightly bitter finish.
Common uses: Thai curries, soups, marinades, fish cakes, stir-fries, dressings and spice blends.
Pairs well with: Lemongrass, galangal, coconut, chilli, ginger, fish, chicken and coriander.
How to use: Add sparingly during cooking or mix directly into pastes, rubs and sauces.
Compare with: More concentrated and evenly distributed than whole lime leaves.
Substitute: Lime zest may provide citrus freshness but lacks the distinctive floral leaf character.
Storage: Keep tightly sealed as the fine powder loses aroma quickly when exposed to air.
Good to know: Because the powder remains in the dish, use less than you would whole leaves and build the flavour gradually.
