Juniper can be used in many ways, drinks, wines, deserts, and of course Gin

The berries make a wonderful introduction to any meat sauce/gravy providing a deep fruity flavour especially enhancing game meat, equally as good in any veg dish

Juniper berries are very pungent in flavour and should be used sparingly in any sauce - its always better to add but you can never take away

Juniper Berries - Quick Reference

What is it?: The dried berry-like cones of the juniper plant, widely used as a culinary spice and as the defining botanical in gin.

Flavour: Piney, resinous and citrusy with a dark, slightly bittersweet fruitiness.

Common uses: Game dishes, venison sauces, pork, sauerkraut, pickles, marinades, gravies, gin infusions and winter drinks.

Pairs well with: Venison, duck, pork, cabbage, beetroot, orange, rosemary, thyme and black pepper.

How to use: Lightly crush before cooking to release the aromatic oils. Start with only a few berries and remove larger pieces before serving if preferred.

Compare with: More resinous and forest-like than ordinary peppercorns, with enough fruit character to work in both savoury food and drinks.

Substitute: A small amount of rosemary with a strip of citrus peel can suggest the same direction, but will not reproduce juniper exactly.

Storage: Store whole and airtight away from heat and light; crush only when needed for the best aroma.

Good to know: Juniper is particularly effective with rich or strongly flavoured meats because its pine and citrus notes cut through fat without adding chilli heat.
