As the sea water evapourates the salt is formed like flower petals, hence the term Fleur de Sel - Flowers of Salt

What is it?: An Indian sun-dried flake salt formed in a similar way to fleur de sel.
Flavour: Clean, medium-strength and delicately crisp.
Common uses: Crush between the fingers and add at the end of cooking or at the table.
Pairs well with: Fish, vegetables, curries, salads, eggs and flatbreads.
Compare with: Lighter than ordinary coarse sea salt and more suitable for finishing, while carrying a stronger salt note than some European flower salts.
Substitute: Fleur de sel or pyramid salt can replace it.
Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.
Good to know: Its open flakes form through solar evaporation, giving a texture that breaks easily rather than requiring a mill.
